220 degrease on big cars and v8 engines 240 and over you are running hot
smaller v6 and v4s cars may run 180 to220 anything over that and your running hot
on average the temp of engine coolant gets from 220-260 before its lubircating and heat dissipating property's start to break down

Your description sounds like engine coolant to me.
Engine is Hot, Coolant is not HOThere engine is hot means above the engine operating temperature, Coolant is not hot means coolant in the radiator is not hot and the coolant is below or withing the operating temperature.i think there is no water blow out from the radiator cap if you have this problem then the following will not apply to your case.* water is not circulating through the radiator, either half of the pumped water is circulating through the radiator or another half circulates through the engine block because of thermostat. so please check the engine thermostat for proper function.
Look on the side of the coolant overflow bottle. There should be a low mark for the coolant for a cool engine, and one for a hot engine.

Actually, the heat regulator for the engine is the thermostat. It closes off the coolant when the engine is cold and circulates more coolant when the engine is hot.

Not a good idea to add water. You should add an engine coolant available from any auto parts store. You should never remove the radiator cap when engine is hot! Wait until the engine has cooled down then remove cap. Fill radiator with engine coolant, replace cap and then refill coolant reservoir. That procedure will get you to a garage where they will find out why it overheated in the first place.
Your engine coolant temperature gauge has a sensor ( there is also a engine coolant temperature sensor that is used for the computer / PCM )
The reservoir has two level lines - one for "cold engine" and the other for "hot engine". If the engine is hot, and the coolant level is low, fill the reservoir to the "hot engine" level. When the engine is cold and the level is low, I usually" top off" the radiator and fill the reservoir to the "cold engine" level.
Engine coolant expands when heated. Heated coolant needs a reservoir to come and go as needed.
