Wheat is a type of cereal grass. When the wheat grain is harvested the stalks that remain are referred to as straw.

Hay however, is dried grass.

Wheat has a coarser, more robust seed-head with shorter awns than barley does. Barley has longer awns, and is more finer in shape than wheat.
