Start with milk. Add rennet (or some other agent to make milk curdle). Drain off the whey (the liquid that separates from the curd). At that point, you have cottage cheese. You can eat it fresh. Press the curd to make it stick together and squeeze out more whey, and you have queso fresco -- literally fresh cheese. Allow it to ferment a bit, and you get a sharp soft cheese. Add cultures of mould and age it, you get green and blue cheeses. Each of these needs no processing before eating. There are a huge variety of cheeses that differ in how the cheese is aged, what fungus or bacteria are allowed to colonize it, whether it is salted, and other variations in processing.
