The sciatic nerve must be dissected out of the hindquarter meat, although in many cases, the hindquarters, including the sirloin steaks, are sold as non-kosher meat because dissecting out the nerve is hard work and slaughterhouses make more money that way. As a result, kosher sirloin is not common.

After slaughter, the meat must be salted to draw out residual blood. Coarse salt (called kosher salt) is used for this.

Finally, before consumption, the meat must not come in contact with milk or with anything contaminated with milk or milk products. So, no milk, butter or cream may be used as an ingredient in a meat dish or as an ingredient in anything served with a meat dish. Cheeseburgers are out, steak is not fried in butter, chicken is not served with cream sauce. A butter dish shouldn't even be on the same table as a meal that includes meat.
