The pigs were, for the most part, literate.

The goat was literate, but reluctant to read anything for the other animals.

The workhorse only knew the first few letters of the alphabet.

The other animals were able to read at about a kindergarten level, but could not read t he complex commandments written on the barn, nor the writing on the side of the van that cam to take the workhorse away

Afterwards, only the pigs are properly literate as they adopt the lifestyle of humans. This allows them to easily fool the other animals, such as when Squealer changes the Seven Commandments. It is stated that Benjamin, the donkey, is the only other animal who can read as well as the pigs.
