I have some that is 5 years old in an air tight plastic container. I am still making pies out of it. I will discard it when it smells rancid or any other off smell. I keep it at room temperature.

As to why, you would have to ask the manufacturer. Lard if stored properly and left unopened has a very long shelf life. It will eventually turn rancid once opened if left long enough.
