Even with the door closed all night the fridge will begin to warm. Leaving the door closed will slow the process but not stop it. You are taking a chance of the food being in the danger zone for too long if the fridge goes above 4 degrees. After that you have a maximum of four hours before it starts to spoil. All in all it's not a good idea.

Panna Cotta should set for at least 3 hours in the fridge. If not allowed enough time it will turn into a soupy mess.
