It depends on the chili sauce. If you're talking about a standard hot sauce (Tobasco, El Pato, Cholula, la Victoria, etc.) then they don't go bad. The chilis (jalapeños, pasilla, habañero, etc.) are "preserved" in vinegar. They do, however, go stale. If they've been sitting, open, then they will lose potency and flavor after about ten days.

Actual time to spoilage is uncertain, but potentially hazardous food should not be unrefrigerated for more than 2 hours. Less time is better.

The food should be cooled from 140°F to 70°F within 2 hours, then chilled down to 40°F within another 4 hours. Either quick chill the food with an ice bath or separate it into smaller containers to facilitate faster cooling.

2-3 weeks, at best.

However: If the Hot Sauce you are referring to is McIlheney's (sic) Tabasco Sauce, it can last 4 to 5 months on your kitchen table.
