You can tell if thawed out chicken has gone bad if it has a bad odor. Chicken that is bad a very distinct and spoiled smell to it.

Anything you take out of the freezer and leave thawed for 8 hours is probably NOT good any more. Putting it back in the fridge won't help.
I'd freeze it as turkey left overs do not taste good after 3-4 days.
