Carrots will rot before potatoes do because carrots are sensitive to germs and what climate they are in. Potatoes prefer darker and cooler places, but they will still stay good for up to two months if kept in a warm place. However, if kept there to long, it will grow soft and will begin to grow new roots, making it inedible.
Potatoes start to sprout when the temperature rises. If your seed potatoes are kept cool, they will not sprout before you wish to plant them.
