I think it depends on what type of fish you have I have a Betta fish and I take about a quarter of the water out then fill the rest up with clean water once a week.

I have heard of them lasting several hours in moist conditions when one has jumped out of its tank. Taking one out of water and deliberately testing how long it lasts is much too much on the cruel and sick side for me to contemplate it.
