Plan on holding raw beef in the fridge for only 3-5 days for steaks and roasts, but only 1 or 2 days for ground beef. If you are not going to use it in that time frame, you should probably freeze it.

I personally wouldn't leave it in the fridge any longer than 2 days before cooking it. You can tell by colour and smell as well.

Cooked beef should be refrigerated as soon as possible after it has reached room temperature. It should generally be refrigerated with one hour to avoid spoilage.
