Plan on holding raw beef in the fridge for only 3-5 days for steaks and roasts, but only 1 or 2 days for ground beef. If you are not going to use it in that time frame, you should probably freeze it.
I personally wouldn't leave it in the fridge any longer than 2 days before cooking it. You can tell by colour and smell as well.
