I've kept it in an air tight ziplock container for one and a half weeks.... i used a half cup of it and put it in a cheesecake and it was absolutely DELICIOUS :) I tested the mixture first and it was NOT fermented.... I've heard tons of people say it ferments after THREE days, but this can of LIBBY'S PUMPKIN PIE MIX was as delicious as it was the day I put it in the container. Everyone loved the cheesecake.... and NO ONE got sick... and it was definitely NOT rotten or fermented. I believe it all depends on the temperature of your refrigerator. I had made TWO other cheesecakes out of the pumkin pie mix all within one week of opening the can. I know that I would NOT have used the pie mix if it was fermented or unsafe, so use your BEST judgement and enjoy the holidays :)

Make sure they are really fresh and not bruised. Keep them cool.You can actually purchase a spray called "Pumpkin Fresh" that will keep the carved pumpkins fresh longer. Other home remedies include soaking the carved pumpkin in bleach for 8 hours before setting it out, rubbing the inside with Vaseline, or spraying it with an acrylic coating. The latter 2 remedies are not designed to kill mold spores, but to keep a barrier between the pumpkin's flesh and moisture.
