Why do Concentric castles have no Bailey?
Concentric castles had baileys, an inner bailey and an outer bailey. The inner bailey was used for the peasants homes and the outer bailey was used for blacksmith workshops and other craftsmen's workshops.

Why were motte and bailey castles better than previous castles?
Motte and Bailey castles consisted of two large man-made mounds, next to each other, one with a larger area and the other higher up, this is where the keep was. Previous castles, however, were mostly based on the old Celtic design, which was basically a large man-made mound on its own. Motte and Bailey castles were basically better because to assault one you had to get through the outer walls of the Bailey and THEN over the ditch/moat surrounding the higher mound and THEN get into the keep. They also work better to control peasants as to the ones who lived inside the castle it seemed like there was a castle within a castle.

Motte and Bailey Castles are created on a raised mound which is either natural in formation or built. At the top perimeter of the mound a wooden post fence is built and within this enclosure there is usually a watch tower built. The design probably dates back as far as the neolithic period when hill forts were constructed to protect towns. These type of castles are temporary in nature unlike the stone keep castle which as its name implies is made of more permanent materials and is surrounded by a stone wall. Later versions of stone walled castles employed such structures as gatehouses, moats keeps and watchtowers, including the grander ones having both inner and outer courtyards.

The fire might be started by building a bonfire against the outer wooden fence (or, more usually, by archers shooting fire-arrows into the castle. As the fire spread through the castle those living inside would be forced to leave allowing the attackers to take them prisoner or kill them.
