For a homemade 9" sweet potato pie bake from a frozen state at 350 degrees F for 45 - 55 min, keeping an eye on the center. When the center is set remove from oven and let cool completely.
( If the edges start the get too brown before the center is set, place 2" strips of aluminum foil around the perimeter of the pie to keep edges from burning.)
Don't bake them for sweet potato pie. Peel, cut, put in lightly salted boiling water and cook about 30 mins or until sticking a fork in them and they're very soft. Same as you would to boil regular potatoes. Drain, put in a food processor and process until creamy. I usually add my evaporated milk at this point, because w/ just the potatoes, it's too thick for processor blade to keep moving. This yields a lovely smooth creamy base. Then do the rest - butter, sugar, spices, etc.

When using a conventional oven, the baking times do not change whether you are baking one sweet potato or a dozen sweet potatoes. The baking times only change when you put additional items into a microwave oven.
The first thing you will want to do when cooking a sweet potato in a convectional oven is to preheat the oven to 375 and put the sweet potato in a baking pan. Cook the sweet potato for a half hour. Take the sweet potato out and stab it with a fork a couple of times. Cook the sweet potato for another half hour.
You can bake one potato in a microwave in about 3 minutes. Test it with a fork to see if it is cooked right through. In a traditional oven it is wasteful to bake one potato. You can fill your oven with potatoes and bake them all in about ten minutes. Make sure the oven is hot enough to start with.
Depending on the size of the sweet potato, you would bake 35 to 45 minutes. Check for doneness and bake longer if needed. Larger potatoes require longer to get done.
That would probably work if you oven had a very low setting. (Some people might consider it not very eco-friendly though). And you would probably want to wrap the potato in foil to prevent it drying out - otherwise you'll end up with dried sweet potato in the morning. A quicker alternative would be to microwave the sweet potato first, then oven for crispness. Or, sticking a metal skewer through the sweet potato cuts down cooking time in the oven significantly, since heat is attracted to the middle of the potato as well as the outside.
If you cook a potato in the microwave for 10 minutes, it is done. Putting it in the oven would only crisp the outside. If you want to do that, 10 minutes should do.

No matter how many potatoes you bake - set the oven at 350 degrees and bake them for one hour. Larger potatoes may take longer. Always prick, pierce or cut a potato before baking as they can explode and make a mess of the oven, if the skin is unbroken and the steam cannot escape.

Turn on the oven function of the toaster oven and set the temp to about 375 degrees. Clean the sweet potato and poke some holes in it with a fork so the steam pressure doesn't cause it to explode. Put it in the toaster oven to cook for at least 20 minutes and then check it by poking it to see how soft or firm it is. It needs to be pretty soft so if it's not, put it back in for another 10 minutes and then check it again. Repeat until it reaches desired doneness.
