Get a fork and pierce the potato, if it slides in easily it is ready, if there is some resistance, try again in another ten minutes. Also, if roasting and they are going black, lower the heat or turn the oven off altogether, but keep the potatos in because they will still cook. If steaming, they turn a slightly lighter shade. Experience is the best teacher, cook them again and again until you think they're right!
