There are 2 cabbage varieties: early and late. The early varieties mature in roughly 45 days. They produce small heads which do not store well. They are for eating right away. Late cabbages mature in about 87 days, and produce a much larger head.
Determine what the first hard frost date is for your area and based on the "days to maturation" listing for each crop, count backwards and set out a second round of crops in the fall.
If one lets a cabbage grow for long enough it will grow to seed as happens with many vegetables that are grown and used before they grow to seed. below is a link to one of many sellers of cabbage seed

omg! these suckers are long. about the size of an average cabbage patch kid doll. This isn't good because they use them to catch people and then take them to their lair.
First you sprout from your seed. Then you start to grow your first leaves (cotyledons). Then you grow larger leaves that all fold inward into a ball, with some loose leaves. Then you may get picked. If you are left alone, a flowering stalk grows up not too long before you die, and you might have offspring.

It will take about 30 days, but after your 5th baby the plant growth increases by 5% to grow by 7% that day I think... Do i make sense? But, it takes a LONG time, a cabbage seed I planted 21 days ago is at 60&.
