You can safely store pea soup in the refrigerator for 3 - 4 days.
I would eat by 4 days max.
Hot and sour soup will stay fresh at least two or three days in the refrigerator. The vegetables will be mushy if it is kept much longer.

I don't give it a chance to spoil. I use it up as quickly as possible. Also, it would depend on how long it has been sitting in the store.
It should be okay for a few days, I wouldn't eat it after a week though.
Store soup in airtight containers, in the refrigerator if you are going to eat it within a few days. If you store your soup in the freezer, in the container with a lid, it will last a lot longer, until you are ready for it.
Unfortunately, potentially hazardous food (which pea soup is) left out that long should be discarded.
