Depending on how much you've shaved it could take from a week to look decent again to a month to make it fully grown.
If you shaved it completley you stand the risk that the fur won't grow back as it should do unfortunatley and may end up with a curly or strange looking coat.

Both her parents were over 100 pounds so I'm expecting her to take the longer estimate to grow fully. The one thing that all vet and dog experts agree on is that shepherds take a bit longer than other large breeds.
