I know that molds can eat potatoes because once i did a science project with molds and potatoes. I don't know if molds can eat starch that's something I'm going to have to do in future times! :) XD

This depends too much on storage conditions to give an answer. If the potatoes are kept dry they could stay mold free almost forever. However if the conditions are damp they could get moldy in just a few days. It also depends on temperature and other variables.
