Sourdough bread's mild level of acidity will discourage the growth of most mold species. We leave my sourdough loaves out of the refrigerator and the loaves will get eaten up in a week but they never grow mold.
The time required for sourdough or any bread to mold depends on that particular bread's level of acidity, the humidity and temperature of the room, and whether it is well wrapped or allowed to become dry.
There is no real time limit on how long this process takes. It is dependent upon what type of mold is in the air that the bread is exposed to and the amount of mold growing in close proximity to the bread. Different strains of mold have different life cycles. Some strains grow very quickly and some grow extremely slow. Mold reproduces by releasing spores into the air, and whenever it lands on organic material that has enough moisture to support its growth, it flourishes. I lived in a house that was overran by mold in the air conditioning unit and mold would grow in a glass of coke or juice overnight! If you are experiencing mold growing quickly on your food, chances are you have mold overgrowth somewhere in your home. This can be very toxic to you, your family, your pets, and even plants. There is no hard-and-fast rule to determine when bread will mold. That depends on the formula, processing, packaging, distribution and storage conditions, including the degree of mold contamination along the way. Bread that had been made under insanitary conditions and is stored warm and moist can mold within a couple days of being made. Bread stored on the counter during summer may not last a week. Freshly made bread stored in the freezer will never mold. It might dry out and taste of cardboard, but it won't mold. But take it out of the freezer and store it on the counter, and - if it already contains mold pieces or spores - you'll soon see mold growth.
