When I make sweet potato pie I bake the potatoes for 45 to 55 minutes. Or until soft on the inside. Soft enough to pierce with a fork. Or you can boil them for 15 to 20 minutes. Just do as you do with regular potatoes. Boil until you can pierce with a fork and it's soft enough to fall apart. But not too soft to be really mushy.

Until they're done! It's all relative to how big the potato is...did you cut in chunks, halves? Test with a toothpick. Boiled Sweet potatoes are delish! Can be mashed just like white potatoes!

To parboil sweet potatoes, boil quartered or sliced sweet potatoes for five to seven minutes. Allow 10 to 12 minutes for whole sweet potatoes.
Test by inserting a fork into one of the sweet potatoes. The outer portion should be easily pierced by a fork, while the inner portion remains firm.

When you stick a fork in the sweet potato and it removes very easily, it's ready.
