Most Brats are pre cooked I like them slightly blackened not burnt. Just some crisp to them. Now I want some grilled brats with sour kraut and spicy mustard. Wash it down with a cold German beer.
IMO the best way to cook a Brat, is to softly boil it until it reaches internal temp of 155, and then finish on the grill. If you take the external layers above 170 too quickly the fat in the sausage will render, leaving you with a dry sausage.
