No, you do not have to let cheese cake cook in the oven before putting it in the refrigerator. You remove the cheese cake from the oven and let it cool away from the heat before putting in the refrigerator.
You should cool food down at least to room temp before freezing. The faster you cool cooked food the less likely bacteria will have to form on it. Putting it in an ice bath is the correct way to cool food before refrigerating or freezing it.
260 is what I heard... Boil it to 260, then let it cool WAY down before working with it or putting it on your skin.

Pour it into shallow containers, less than 3" deep, and let it cool so it is no longer steaming. Stirring it occasionally should help the process. This should take less than 30 minutes. Then put it in the refrigerator.
Beat your eggs on the lowest speed possible before adding them a bit at a time to the cream cheese mixture.Scrape the sides of the bowl to smooth out lumps before adding the next bit of eggs. Also try placing your cheesecake pan in a larger cake pan. Fill with water to 2/3 up the side of your cheesecake pan. (If using a springform pan, wrap the pan with foil to keep water from seeping in.)When the center of the cheesecake is set, but still a litle jiggly, remove all from the oven and allow the cheesecake to cool in the water until it's at room temperature. Then chill.

Its ok as long as you let the water cool to room temperature before adding the water back to the bowl, or adding the betta to the water. Also, it is completely unnesseary to boil before putting in your betta's bowl.
water keeps cool by putting icepacks beside it.
