You should play the lotto because lady luck has been on your side. You need to have a trusted mechanic inspect your cooling system to determine where the coolant has been going.
Look at the nuts and bolts that hold the parts on. They will have tool marks on them if they have been removed.
Sometomes it is hard to get all of the oil out of the cooling system. However the place that replaced the engine should flush the cooling system until it is clean. Also if your car has an engine oil cooler , it could be the cooler in the radiator and not have been the engine in the first place.

The original equipment for this engine was a clutch-type mechanical cooling fan and not an electrical one. In 1998 the 5.9 L engine with the Max cooling package had an electric fan and of course your Jeep may have been retrofitted at some point with an electric fan but the specific year and engine you mention came with the manual fan.
It sounds like your dizzy cap isn't lined right which causes the engine to stay running after the ignition has been switched off. i had the same problem with my fiesta

Indeed, the light may be linked to a mal-function in the cooling system. If the tech scanned for trouble codes, he should be able to give a better diagnosis than "may have something to do with the cooling system".
usually after the car has had a chance to cool down, the hose should be "spongey" when it is grasped, but after attaining operating temperature, the hose should become firm as the cooling system presurizes up. it will remain so, again, until the engine/cooling system cools down. Dont ever open the radiator cap when the engine has been run to operating temperature or not had a chance to cool down adequately, the pressurized system is very hot and you risk serious injury!!!
