Sauerkraut was pickled as a means to preserving a cabbage crop for long periods. As a rule my German immigrant Grandmother used to say it was good AT LEAST 9 months in a sealed refrigerated container, when she passed the family recipe down to me. Just look out for mold or uncharacteristic smells.

How long do you keep your pickles? Will stay in a sealed and refrigerated container for 9 months or more. Just keep an eye out for mold. I've made hundreds of batches of it and never thrown any away or had any get moldy but I've always used it before even 3 months. It was conceived as a way to keep cabbage from spoiling.

Fermented foods have a very long shelf and as well very nutritious for us. Enjoy!
