The definition of one mole is: It is a number (eg. of particles of any kind), like pi is a number (of ratio from diameter to circle).

It is a very big number, symbolised as NA (and named after Avogadro):

NA = 6.022 * 1023 (-/mol) or (mol-1)

So there are 1.62 * NA = 9.76 * 1023 atoms in a mole

(it is not important of what kind the atoms are).
