A fresh ham is a fairly standard piece of meat and therefore the nutrition information may be quickly looked up in a reference table.

However, "lunch meat" is a processed meat, and therefore it all depends upon the whim of the processor.

Often times, ham as "water added" during the processing. The law requires it to say "water added" on the label. That is why one brand of lunch meat may be $3 per pound and another is $4 per pound. The less expensive it is, my guess is the more water was added. A watered-down price may indicated a watered down piece of meat.

The good thing is water is cheap and has zero calories. So while a culinary artist may turn their nose at water down ham, the lower quality may actually be healthier, at least calories wise.

So there is no simple answer that I can give. You must read the label of the specific brand you intend to buy to find out what they did to that fresh ham during the processing.

For example:
