I leave the skins on my potatos boil them for about 10 mins drain them off coat in a little oil then cook in oven not many calories as your not deep frying them.Also if you like chilli coat them in a little chilli powder for nice spicy chips.Throw the chip pan away.
The only possible way to know is to weight the chips before and after frying and then calculate how many calories of oil in the difference - by then uou'll have cold chips and a very oily set of scales mOst blog I've looked at say 189 per 100gs but I thing that's a bit low and like my chips thin which holds more oil so I generally say 220 per 100g
