Vatican City is the only universally recognized independent nation that is not a member of the UN, although it has "permanent observer status," the same status that Palestine currently holds. There are several other putative states that are not universally recognized that are not members of the UN, including Kosovo, Republic of China (Taiwan), Somaliland, Transnistria, and others.

south ossetia

nagorno karabakh

kuzey kibris aka northern Cyprus

somaliland

pridnestrovie aka transdneister

western Sahara

& palestine aka Gaza plus the west bank whether separately or together

so perhaps as many as 11 or 12

or even more if you allow for any that may also exist but havent yet been mentioned

Well there were 51 countries in the UN originally and there are now 192. So 141 countries were not original members of the UN.
