20 oz. of peeled, cubed butternut squash equals about 4 cups.
I just pureed an entire Butternut squash (without the skin) and it filled 26, 1oz ice cube spots. So I would say around 24-26 ounces or more if you did the skin too.
A large butternut squash baked and flesh scooped out equals between 2 1/2 to 3 cups (I do this for my butternut squash bisque/soup).
Cubed butternut squash (2 cups), 2 tablespoons of butter, minced half onion, Arborio rice (1 cup), 1/3 cup of wine (preferably white), 5 cups of chicken stock, 1/4 cup of grated cheese ( Parmesan will do), salt and black pepper are the ingredients for you to be able to make butternut squash risotto.
It's about half. So you would need about 6 cups of pureed pumpkin.
That would be about 2 cups.
