There really isn't an easy way to figure the exact amount of bone in a chicken, because every chicken is a little bit different. However, a general rule of thumb is that when you cut up a whole chicken, there is going to be approximately 40% of the chicken for refuse (that is, portions that cannot be directly eaten). You can use those portions - for example, drumstick bones and rib bones, etc - for chicken stock and flavoring, but they cannot be directly digested.

So, by this theory, one pound of bone-in chicken would equal 0.6 pounds (approx. 9.5 oz, or 272g). However, this is not an exact science. And if you are following a recipe that uses bone-in chicken, also keep in mind that bone-in chicken has a longer cooking time, so you will have to adjust your recipe accordingly, otherwise you'll overcook your chicken and it might be tough and dry.
