The radiator only, aprox three quarts. The cooling system (radiator, engine, heater and hoses), aprox ten quarts. It depends on the engine size.
If the entire system including the block, heater, radiator and all hoses were empty, it would take between 12 and 13 quarts to fill the system. So if you use a 50/50 mix of antifreeze and water you would need 6 to 6 1/2 quarts of antifreeze.
Total capacity should be aprox 12 quarts.
Quarts of what?
Depending on which engine you have it should take between 10 and 12 quarts to fill an empty cooling system. If you are just draining the radiator, probably 4 quarts. This coolant mixture should be at least a 50/50 mix of anti freeze and clean water.

You need only to drain off a couple quarts of coolant to change the thermostat.
