In general, a couple is considered married once their union has been solemnized by the Officiant (Pastor/Minister/Justice of the Peace/etc). This is done by signing the paperwork after the ceremony. The ceremony itself is nice and all, but signing the paperwork is what makes it legally recognized. If the husband drops dead after the ceremony but before the signing, the marriage MIGHT be contestable. If the husband dies after the signing, the new wife is certainly in the line of legally recognized heirs...if the husband has no pre-existing will. Most of this will vary a bit from state to state, of course.
