Well, as a Catholic, we believe that Jesus shed every drop of blood in His body. When one thinks about it, it would make sense. First off, Christ sweat drops of blood during the Agony in the Garden, so there He lost blood. Secondly, He was brought before the Sanhedrin and was hit and shoved there, so He could of lost blood there also. Thirdly, He was scourged at the pillar. Most men died during the Roman scourgings, so that tells us He lost a lot of blood there. Fourthly, He again was beat, but by Roman guards. Fifth, He made the climb up to Calvary, falling three times. His knees scraped and His wounds not tended to. So He was still bleeding. Then, He is nailed to the Cross and hangs there for three hours. More blood lost. Then once He dies, He is pierced in His heart (side), from which water and blood flow out.
With all this in mind it is logical and obvious that He shed all His blood. Since He is the Redeemer of all mankind, it would also make perfect sense for Him to do this. He loved us all so much to open the gates of Heaven through His death so He surely shed every drop of His blood for the salvation of all mankind.
Mark 15:17 And they clothed him with purple, and platted a crown of thorns, and put it about his head,
John 19:1 Then Pilate therefore took Jesus, and scourged him.
Mark 15:25 And it was the third hour, and they crucified him.
John 19:34 But one of the soldiers with a spear pierced his side, and forthwith came there out blood and water.
Given all the above, it's safe to say there were significant amounts of Jesus' blood on the cross. But don't be mistaken: it wasn't the loss of blood that caused His death.
Contemporaneous St. Elizabeth, Queen of Hungary, St. Matilda and St. Bridget wanted to know details of the Passion of Our Lord Jesus Christ. For this, they offered fervent and special prayers. He responded by appearing and revealing to them , among many other things, that He had shed 28,430 drops of blood during His Passion. At the medical standard of 20 drops per ml, this yields 1.4215 liters or 1.5 quarts. His words to the saints were written in the form of a letter that, on April 5, 1890, Pope Leo XIII placed on a silver box which has been kept in the Church of the Holy Sepulcher in Rome, ever since.
On average, the human body of an adult has 5 liters or 5.3 quarts of blood. Accordingly, the Lord lost about 30% of His blood during His Passion.

We do not know exactly how much blood Jesus lost beforehe was crucified, but since he had been flogged repeatedly and was bleeding from his head from the crown of thorns, it would have been a considerable amount. After he was crucified, however, he lost all of his blood.
