How much dried rosemary do you use when the recipes calls for fresh rosemary?

Usually about three times as much, but if a recipe calls for fresh, do your best to use fresh. Dried rosemary is one of those herbs that does not do very well dried. Fresh vs dried makes a huge difference. Also, depending on the recipe, if you're using dried rosemary, don't leave it in the food. Let it sit to soak the flavor in and then strain/take it out.

How much fresh coriander is equal to dried coriander?

One tbsp of fresh coriander would be one teaspoon of dried and vice-versa. That is a three to one ratio. This formula works for all herbs. Just remember 1tbsp fresh = 1 tsp. dried. Packaged dried herbs are stronger than fresh herbs, but lose their potency as they age. If the container is new then use a bit more sparingly. Fresh herbs are the way to go to get the best results.

How much is 1 cup of fresh parsley compared to dried parsley?

I use nearly the same ratio to substitute for most herbs. 3 to 1. You want one third the amount of dried as the amount of fresh that is called for. That would be approximately 1 teaspoon of dried to one tablespoon of fresh, or 1/3 cup of dried for your 1 cup of fresh. However, it also depends on how fresh your dried herbs are. Fresher dried herbs will have a stronger flavor and you may be able to use less. Older dried herbs will have a weaker flavor and may require more. If the parsley is to be used as a garnish, I wouldn't substitute dried.

How much dried lemon grass do you need in a recipe that calls for fresh lemon grass?

You would need about a quarter of dried lemon grass by weight compared to fresh lemon grass. The problem is that dried lemon grass tends to be woody, and cannot be added whole to a recipe as you would with fresh lemon grass. The only way to get decent results is to make an extract (a very strong tea) with the dried lemon grass and use as seasoning just before serving.
