You might ask how much education any of the Israelites had, since the Torah had not yet been given when they were still in Egypt. The answer is that the Israelites were taught the knowledge of their forefathers Abraham, Isaac and Jacob. For an example of their wisdom, see the advice which Joseph gives to the Pharaoh of his time, and Pharaoh's response (Genesis ch.41).
The Midrash states that the Israelites possessed scrolls containing the original narratives of the creation, the flood, and the history of the Forefathers. This, and the details of their religious observances, was the Torah that they had and studied.
Moses spent a few years in his parents' house (Exodus ch.2). He was very young, but the memories of his parents were his earliest memories. His father was a leading elder Sage. Later, Moses is described (ibid.) as "going out to his people"; because, when he was living in Pharaoh's palace, he was not forbidden from going out. We can be sure that he sought out wisdom at every opportunity.
The tradition of the Talmud is that both Pharaoh's daughter (Exodus ch.2) and Jethro (ibid.) took the step of joining the Israelites; and Moses, who spent time with each of them, surely discussed matters of belief with them.
