∙ 13y agoTo calculate the amount of ground (mince) beef for a number of people, allow 6-8 oz (170-225g) per person.
If the chilli recipe you're using is a good, basic standard recipe - just meat and sauce (onion, garlic, chilli, stock, wine, herbs, spices) - around 7oz or 200g/person should be fine.
When calculating quantities, always round up rather than down; much better to have some left over than the reverse.
It's a good idea to put ten percent of your finished recipe straight into the freezer. Use rectangular containers and layer the chilli in about 1" (2.5cm) layers with freezer paper between the layers.
Have the paper come up over the sides of the container, so each layer is easy to pull out.
If you run short of food, it takes no time to reheat the thin sheets of chilli. Any left in the freezer can be separated and wrapped individually, in freezer bags, for later use.
Flat-freezing is a good tip for any food of this type: it's easy to store and easy to reheat, and freezes more quickly than thick portions, so it's a safer option. Separate and wrap as soon as the layers are hard enough to handle.
