It's called nuclear fusion.

It happens when the temperature is so high, the protons of the atoms in the sun get so agitated, they escape the atoms and they combine, or fuse, because the attractive nuclear force is greater than the repulsive electrostatic force. When they fuse, they release a positron and a neutrino. The resulting product is a hydrogen atom. When a hydrogen atom and a proton fuse together because of the immense heat in the sun, they release a gamma ray, and the next product is a helium isotope with one neutron. Now this reaction occurs like crazy in the sun, so there are lots of helium isotopes after this reaction. When two of these helium isotopes fuse, they release two protons, and the resulting product is a helium atom. This whole thing cycles again and again until the hydrogen atoms run out, and the only thing left is the helium atoms. So the sun fuses helium atoms, then it ultimately either burns out, explodes, or explodes and becomes a black hole.

The reason why radiation from the sun exists is because of the gamma rays produces in this cycle.

The reason why the sun gives off so much energy is that the ratio of Atomic Mass to mass number is lower the heavier the nucleus is, which is called a mass defect. So when lighter nuclei fuse into heavier nuclei, some mass is lost. And because of E=mc squared, we know that small amounts of mass can be exchanged with high amounts of energy. So the little mass lost in the mass defect fusion process is converted into high amaounts of energy.
