Really the best way to "bypass" the factory infinity amp is to get a new head unit. Once you do this you'll have a much better signal source to feed to aftermarket amplifiers which you'll want to use to power your hopefully upgraded speakers. There are ways to keep the stock head unit, remove built in equalization, and send clean, flat signals to your amps as well. But changing the head unit probably will be your best option.
