Make sure you are up to date on all the skills you need for the job you are seeking. Look at the job requirements and make sure that your resume, application and interview reflect what you can do in each of the areas the company needs. The gap doesn't need a huge explanation and you should dwell on the skills you are bringing into the workplace and any experience you have--recent courses, volunteering etc.
There are many books out there on interviewing, and most are at the library. Look for the ones that prepare you for competency based interviews. Many companies use a panel, which can be intimidating, so reading up on this sort of interview will help.
I found that no one minds if you take notes--or bring them with you. I note down the interviewer's names, have a short list of important skills I want to include in any answers and so on.
