Yes you can trim off unwanted branches & limbs to create a Bonsai affect. See Google search for juniper bonsai & let that be your guide. HOWEVER, DO NOT TRIM TOP OF BRANCES, these must be finger pruned. You pinch off just alittle of each top branch. This will force growth down INTO THE TREE and thus make the tree much fuller. Cutting the top of the branches stunts tree growth. Look up finger prunning if not sure what to do. Simple procedure once you know how. Have fun. Bonsasi1948, Ted

Yes, you can prune it to look like a bonsai (tree) safely. It's a matter of removing foliage from the trunk and larger branches to expose the bark, then shaping the remaining foliage in one of the bonsai styles. Which style to use depends on the shape of the juniper being used.
