The 20" will ride smoother on uneven ground, but IMO 3-speeds aren't enough. with 3-speeds you get fairly large jumps between the gears. If it was me I'd go with the 6-speed.
The simple explaination is there are gears at the bottom of the shaft which turn other gears in the steering box which move an arm which moves a series of linkages attached to the front wheels. In a rack & pinion, instead of gears in a box there are hydraulics that move tie rods connected to the wheels
No, they would need to be bevel gears. Peg gear wheels would but they are generaly made from wood and used for agriculture etc.

The reason you would choose 18" wheels over 17" would be to run a lower profile tire, which would look, and all other things being equal, have better cornering response. On the other hand they may be heavier, and reduce acceleration, and braking slightly. Also, it depends on what size of a car you have, a Nissan 350Z for example would be better suited for bigger wheels, whereas a Honda Civic may be better suited with 17's.

The wheels could be v-belt or flat belt driven in which case the wheels would be pulleys. They could also be driven by chain in which case the wheels would be sprockets. The wheels could also have direct drive in which case they would be called gears.
It depends. They will definitely be easier to store, as well as easier to move around. However, folding chairs are usually cheaper looking. Folding patio chairs are an excellent choice because they are easy to move indoors when you are not using them. I would say with any car you would have too. the gears of a car work like a zipper with the teeth of the different gears. when you put a car into 4wd or 2wd, you are trying to engage or disengage the gears for those sets of wheels. when switching gears, the clutch goes in, effectively disengaging the gears so that it may be rotated to the next then re-engaged. Because your car is automatic though I don't know how that effects it. one thing though, it can't hurt it try it that way first.
Small wheels would spin quicker and be more likely to slip, a larger diameter wheel would move slower and grip the surface better so all rotational movement of the wheel would be translated to forward motion - albeit at a slower speed. The energy input is fixed (the spring) the energy that you could lose is - wind resistance, friction in gears etc, and slippage (producing additional friction/heat)
It is likely that a cable transmission would be better overall. An electronic transmission does not have a direct connection to the actual gears.
