Nothing happens to the category. Usually, there are other Supervisors for that category that may be online, while there is non-supers helping with the category.
Supervisors on WikiAnswers are just regular users who have been very active on the WikiAnswers community. You can become a supervisor just by doing your best to help out on WikiAnswers in any way you can. If an existing supervisor notices how good a job you are doing, he may recommend to a WikiAnswers administrator that you be made a supervisor.

No, WAmmys are open for both Supervisors and Non-Supervisors. It just so happens that the majority are given to Supervisors due to the fact they are more active than single Non-Supervisors.

Sometimes a supervisor(s) will not be active during parts of the year. Sometimes it is temporary, other times permanent. If you are worried about their absence email or message a CA. If you want questions merged or trashed or something else that requires a supervisor to do it just message an active super and they will be happy to do it. Remember that just because a supervisor isn't assigned to a category doesn't mean that supervisors aren't active in it.

There can actually be a multiple number of supervisors in one category, I've once seen 4 supervisors in one category! But it depends on how busy the category is, sometimes and usually the category may need more then just 1 supervisor for one category of interest. So there are usually a multiple number of supervisors, supervising a category. But usually less than 5, but hey, the more the merrier!
