If i have read your question properly, then it seems to me that she wants you to get angry with her, that will make the breaking up more easy because you won't be emotionally glued to her.
If you are serious and think it could work, then you have to tell her that you love her and that your mom won't be a problem coz you are going to spend the rest of your life with her and not your mom.
Tell your mother that she has to accept this girl because to you , there is no other. Make sure you make her understand that you love your g.f and that she must too so all of you can be very happy.
