Yeah in the world of warcraft DPS is damage per second, its pretty much the classes that can do damage use spells and such. there's tank-def, heal-healer and DPS-damage
It depends on what you want the Paladin to be...tank or dps. Tanking go protection and dps go retribution.
It stands for Damage per second. Higher is better. DPS can also be refered to as the act of applying damage to a target, or to refer to a class that has the primary role of damage (mage, hunter, warlock, etc.)

Yes, Taurens make the best warriors, having the highest strength and stamina, so they are ideal for being warriors, tank or DPS :) Yes Tauren warriors are good, they have imporved health and war stomp which helps alot too
Don't worry about your strength, worry about your DPS if you are specced for it, and survivability if you are specced for tanking. Screw that whole thing. Play runescape
I assume by "stats" you mean everyone's damage, DPS, healing, over healing and what not. It is done with an add on called Recount. You can get Recount from the Curse addon site (linked below).

Yes. Neither is better .. they're just different in playing style. The hunter doe one thing really well: pump out DPS. A druid can play any of 3 roles: Tank, Healer, and DPS. If you are inexperienced in WoW, go with a hunter first to learn the mechanics of the game. then the druid.
Hardest is not easily defined. It depends on skill lvl, character lvl, skill playing the character lvl, an class. Every BG has stong classes and weak classes. IMO AV is a great for DPS casters ie mages and druids and rogues can pretty much do well in all BGs. If you are doing AV and are a caster/dps make sure you ALWAYS stay close to the pallys and warriors (dps or tank)
My guild usually goes, 2 tanks 1 raid healer and 2 tank healers cause it makes it easier but if you have poor dps you can probably just take a paladin as the tank healer and have him BoL one tank and then he just heals the other, but that's if you have poor dps, better safe then sorry.
