I have been cooking Pizza in a wood burning brick oven for several years and do not have a problem with the cheese burning and I cook at 800-900 degrees. However I only use fresh mozzarella packed in a brine or water solution. If you have been using low moisture cheese this may be your problem. Fresh mozzarella is more expensive but well worth it. Hope this helps.

Heat rays from a oven or a microwave or something that has a hot surface, or hot air around it. The mozzarella cheese will melt then it will start to fry, then eventually it will cause it to burn.
