Actually, it appears that the original, as first written in Hebrew, was "When God began to create heaven and earth, and the earth was without form ..." Experts in Hebrew say that, correctly read, the passage says that the earth was pre-existing.
The King James Bible has 'heaven' in the singular, but others may vary. The ancients thought that there were several, usually seven, heavens above the earth. The basis for this view was the separate motions of the sun, moon, planets and stars, which were thought to require separate 'heavens'.
