You can get most planes offline, however there are some new planes in DLC, which you need Xbox Live to buy. Also, some of the attachments to some planes are unlocked by doing certain feats online.
No. You will not be able to keep your 11000 gamerscore that you earned with an offline account. I got f***ed myself, and lost 7000 worth of achievement's.
yes if you are connected to xbox live your games will automatically prompt any updates for download and installation. but if you unupdate your game by clearing your hard drive cache you will be signed out of xbox live and only be able to play offline until you update to the current version of the game before being able to play online again. reasons for unupdateing and re updating a game would include being able to abuse bugs save and reupdate for the pure gain or advantage of what your not supposed to be able to do or get after the bug has been patched.
As of now the Halo: Reach beta is gone, your not going to be able to.

When you first get the Xbox 360, you need to create a profile. This is easily done by just typing a name of your choice. You will now be able to play any game offline and save games within your created profile. If you want to create a live account, you will firstly need to connect your Xbox 360 to the internet by wireless or ethernet. When you have done this, there will be a option to join live, do this and go through the set up. You will need to buy a Xbox live gold membership to play online.

For you to be able to play the game itself - no.
The original Xbox is able to as long as you have the DVD playback kit. You can buy one for about $5.00 (U.S) on eBay. The Xbox 360 is able to just with the system itself.
