Unless specifically stated otherwise, a tribute (and indeed, any cost) must always be something you control.

Soul Exchange and Lava Golem let you tribute the opponent's monsters. But there is no need for cards like the Wicked Gods to state the tributes must be your own, as that is the default and needs no further explanation.

Does Zubaba Knight cancel the effect of the destroyed monster?

No part of Zubaba Knight negates effects but since it destroys the monster at the start of the Damage Step it might mean that some monster effects would be unable to activate. Monsters which trigger when destroyed by battle will not activate because they were destroyed by an effect. Many monsters with effects that happen during or after Damage Calculation will never activate because the damage step will end as soon as it starts.

Can you use Fusion Substitute monsters from the deck for the effects of Future Fusion or Chain Material?

No, you cannot use Fusion Substitute Monsters for "Future Fusion". You can, however, use Fusion Substitute Monsters for "Chain Material" as long as those Fusion Substitute Monsters exist on your field or hand. The reason Fusion Substitute Monsters cannot be used from your deck is because they have no substitute ability while in the deck and thus cannot be used as replacements for other Fusion Material Monsters.
